The Path
Apprenticeship sets the terms here: repetition, correction, and the slow transfer of technique. At Gion Maruyama, Tsukasa Miyashita trained within a kitchen associated with Kyoto discipline and seasonal precision; at Gion Sasaki, he continued that training and tightened the work further. Those years established the base of the cooking: poise at the board, control in service, and a respect for structure that lets the food stay legible. At Higashiyama Tsukasa, Miyashita has turned that inherited method into his own house style as owner and Head Chef.
The Work Today
“It's a given that the food is delicious. Our guests deserve an exciting experience.” At Higashiyama Tsukasa, that line reads like a working brief. Flavor is treated as a baseline, not the claim; the harder task is to shape a meal that changes tempo, keeps attention, and leaves a clear impression. Tsukasa Miyashita’s approach puts experience on equal footing with cooking, so the room, pacing, and plate all carry the same intent.
Signature
The signatures point to a kitchen built around rice, fish, and controlled contrast. Fish spring rolls bring a crisp edge and quick movement; sushi rice porridge shifts the grain into a softer register; rice paper rolls keep things light and direct. Spicy curry rice adds heat and force, while rice topped with raw egg and XO sauce leans on richness and intensity. In Tsukasa Miyashita’s hands, these dishes stay grounded in familiar materials while moving across different textures and tempos.
In Their Words “It's a given that the food is delicious. Our guests deserve an exciting experience.” Taken plainly, the statement sets the standard. Good food is assumed; what matters is whether the meal has energy and shape beyond the obvious. For Tsukasa Miyashita, hospitality is not separate from the cooking but part of the same job, and the experience is built to hold both.
Acclaim
Tsukasa Miyashita’s work has been recognized with The Tabelog Award Bronze winner and Selected for Tabelog Japanese cuisine WEST "Tabelog 100". Those listings place Higashiyama Tsukasa in a field where consistency, restraint, and a clear point of view are read by peers and diners alike.
