i. Biography
Ugo Perret-Gallix is the Executive Chef of KIBUN in Nishiazabu, Tokyo, a restaurant that opened in 2024 and was recognized by the Michelin Guide within months of launch. He is a French chef who trained in France before moving to Japan in 2015, spending two years at Kyoto’s Kikunoi Honten and later serving as chef de cuisine at ESqUISSE in Tokyo from 2020 before opening KIBUN in May 2024.
