Bar management at Jigger & Pony required more than drink service; it meant reading the room, holding the pace, and keeping the welcome consistent while standards stayed visible. In that setting, Uno Jang built a practical sense of how atmosphere is assembled through service as much as through what is poured. The work at Jigger & Pony became the base layer for the wider remit he later took on across the group.

Today

As creative director of Jigger & Pony Group in Singapore, Uno Jang sits at the point where concept, presentation, and service logic have to line up. His focus on Korean cocktail dining-bar concepts places identity and execution in the same frame, where a clear point of view has to survive the realities of the room. The job is less about headline gestures than about keeping the work coherent across glass, table, and service flow.
