Uwe Opocensky is the Executive Chef of Restaurant Petrus at Island Shangri-La, Hong Kong, where he was appointed in September 2019 and has focused on evolving the restaurant’s classic French identity with a seasonal, ingredient-led approach. He is associated with Michelin-starred Petrus, which earned a Michelin star under his leadership in the 2020 guide, and Shangri-La’s official materials identify him as the chef responsible for the restaurant’s guest-facing guéridon service and dish introductions.
Earlier coverage places him in Hong Kong with Shangri-La from 2004, after training at Ferran Adrià’s El Bulli and working in other luxury hotel and fine-dining settings.
