i. Biography
Vanja Puškar is a Serbian chef, restaurateur, and the founder of the New Balkan Cuisine culinary group based in Belgrade, Serbia. After co-founding the Chefs Club Belgrade and opening his pioneering atelier Iris in 2016, he launched bistro Iva New Balkan Cuisine, which received a Bib Gourmand distinction in the inaugural MICHELIN Guide Belgrade. His cooking centers on micro-seasonal local sourcing, indigenous Balkan ingredients, zero-waste practices, and modern culinary techniques.
