Wei-Jen Chen

Wei-Jen Chen is the executive chef and proprietor of Qi 27 (Sushi 27), an acclaimed reservation-only Edomae omakase counter in Taipei, Taiwan. Originally establishing Sushi 27 in Kaohsiung in 2011 where he earned widespread renown as southern Taiwan's leading sushi master, Chen relocated the restaurant to Taipei in late 2019. Largely self-taught, he is recognized for his precise fish-aging techniques and dedication to traditional Edomae sushi craft using premium seafood sourced directly from Tokyo.
