Xavier Pellicer

Xavier Pellicer is a Barcelona-based chef and owner of the eponymous restaurant Xavier Pellicer, Healthy Kitchen, where his cooking centers on seasonal, vegetable-led cuisine. He trained in France under Jacques Maximin and later worked in landmark Catalan kitchens including El Racó de Can Fabes and ABaC, where he reached two Michelin stars. In 2024, he received the Premi Nacional de Gastronomia from the Acadèmia Catalana de Gastronomia i Nutrició.
