    i. Biography

    Yasuhiro Fujio is the owner-chef of Middle in Kyoto, a riverside restaurant in the Shimogamo area that opened in 2021. He is born in Osaka, educated in England and Paris, and trained in restaurants including Passage 53, Mirazur, La Cime, and Kiyama before opening Middle. His early career includes recognition in Japan’s RED U-35 competition and as the first Japanese national to win the San Pellegrino Young Chef international cooking contest.
