The Work Today
At the camp, the cooking leans into African flavours without overcomplicating the brief. In Baked Zambezi Bream, coconut milk, fresh green dill, lemon juice, chopped red chilli, ginger, and seasonal mixed vegetables are set in a way that keeps the dish grounded and composed. The interest is in balance: brightness against warmth, with each component left visible. Zimbabwean Lake Harvest bream fillet follows the same working logic. Marinated in coconut milk, ginger, chilli, and dill herbs, then served with mixed seasonal vegetables and sweet potato crisp, the plate works through softness and texture, richness and lift. It is a method that puts control ahead of flourish, and lets the ingredients do the speaking.
Signature
Baked Zambezi Bream and Zimbabwean Lake Harvest bream fillet are the clearest markers of Zamani Sibelo’s kitchen. Both dishes are ingredient-led and regionally rooted, and both keep the fish at the centre rather than burying it under treatment. In Their Words “I was inspired to be a Chef by the Former Safari Lodge Executive Chef, Brain Ndlovu, who is now a member of the Zimbabwe Culinary Judges.
