The kitchen leans on the familiar architecture of the region, then keeps the method direct: charred eggplant with garlic and preserved lemon for Baba Ganoush; hummus with chickpea, garlic, tahini, paprika, and lemon; Muhammara with roasted bell pepper, walnut, and olives; Labneh with cream cheese, feta, Greek yogurt, lemon zest, rose petal, and herb oil. The larger plates follow the same line. Slow-cooked grass-fed lamb carries mechouia marinade, eggplant puree, pomegranate, and lamb demi-glace. Octopus sits with Catalan spinach, almond, raisin, confit potato, and smoked paprika. San Sebastian red snapper is roasted with sofrito and panadera potato.
