    Salt, sour cream, honey

A brined cucumber round takes its place with smetana and honey before the room has settled; Rodrigo Oliveira, chef at Bar Agrikultur in Stockholm, works inside that small-plate discipline. His current practice runs between Balaio IMS and this Södermalm bar, carrying Brazilian cooking as a working language rather than a fixed set of signals. At Bar Agrikultur, that means entering a kitchen already tuned to Swedish produce, salt, fat, acid and sugar, then letting the gesture stay small enough for the counter.

Oliveira’s own vocabulary has often moved through recognisable forms, dadinhos de tapioca, caipirinha, Caboco, but the useful line here is method rather than signature transfer. He has described the work as made with eyes on the world and feet grounded in Sertão; in Stockholm, that reads as a cook’s willingness to let place speak without surrendering authorship. What can be seen on the plate is a shared conviction: no heavy theatre, no ornamental trick, just a bite built tightly enough that each element has to earn its space.

    Three tanks behind the bar

The program at Bar Agrikultur is built for sequence. Small plates arrive for sharing, one after another, rather than as a formal progression, and the kitchen keeps the grammar close to Swedish flavors: salt-brined cucumber, cheese balls with honey, mushroom skewers, pork neck with oyster sauce and chives. The best-known plate is almost blunt in construction, six brined cucumber rounds, smetana, a trickle of honey, sometimes dill. The balance does the work.

The beverage side has the same compactness. Natural wines move through the room by the glass, while the gin program gives the bar its own bench-side labor. Three stainless steel tanks hold house-distilled gins, with herbs, oils and fruits used for rotating flavors. It is not a cellar built to impress by size; it is a bar program made to sit close to the food, bright enough for brine, soft enough for honey, clean enough for dill. Michelin has marked Bar Agrikultur with a Bib Gourmand, but the plate still lands as a bar bite, not a trophy.

    A small room near Nytorget

The room keeps its scale. Bar Agrikultur sits on Skånegatan 79 in Södermalm’s SoFo area, near Nytorget Square, sister to Agrikultur but looser in posture. The room is tiny, warm and familiar, with the buzz of a neighborhood wine bar rather than the hush of a dining room built around ceremony. Plates pass low over the counter. Glasses shift quickly. The energy stays conversational, even when the room is full.

That closeness matters to the food. A cucumber round can disappear if the room asks too much of it; here, the pass is short enough for a cook’s restraint to remain legible. The Swedish ingredients, the house gin, the small plates and the vinyl mood all stay within reach of one another. The bite that made the place travel beyond Skånegatan is cucumber, smetana and honey.
