Chris Lilly, Chef at Big Bob Gibson’s Bar-B-Q in Decatur, keeps hickory smoke, white sauce and family discipline on the line.
The chicken meets white sauce after the smoke, a house gesture that keeps Chris Lilly, Chef at Big Bob Gibson’s Bar-B-Q in Decatur, tied to the same line each service. Lilly is Vice President and fourth-generation partner here, and he has worked inside the Decatur barbecue house since 1992. His path began at the University of North Alabama, then settled into a kitchen where the real instruction comes from heat, timing, and the expectation that the next plate should recognize the last one. The place reaches back to 1925, when Robert “Big Bob” Gibson began serving pork and chicken after smoking them over hickory. That origin is not treated as ornament. It sits in the method: chicken, brisket, pulled pork, and ribs moving through a program built on low smoke, sauce, and repetition. Lilly’s role keeps him between family continuity and the daily pass, where inherited standards have to survive the lunch rush without becoming rigid.
Alabama white sauce gives the room its clearest signature. The mayonnaise-vinegar-pepper blend began here around the opening era, made for smoked chicken and now bound to the North Alabama style that Big Bob Gibson’s helped define. The house also works with red sauce, but the white sauce carries the lineage most plainly, especially on chicken pulled from hickory smoke and finished with the tang that cuts fat rather than covering it. Across the operation, the sauce is made in 20-gallon daily volume, a figure that says more than any adjective could. Lilly’s own record keeps sauce close to the center: his Big Bob Gibson Champion Red Sauce received American Royal International Barbecue Sauce Contest recognition as “The Best Sauce on the Planet” in 1998. The competition record is part of the craft here, not separate from it. Memphis in May titles across brisket, chicken, pork, and ribs sharpened the same discipline the restaurant asks of ordinary service: meat held to tenderness, sauce held to balance, and smoke kept legible.
The room works like a barbecue house that has never needed polish to explain itself. Smoke carries in from the pit work; the counter keeps the pace; plates move with brisket, pulled pork, ribs, smoked chicken with white sauce, beans, slaw, fries, and pie. The walls carry competition trophies, a visible record of the circuit, though regular service gives them their setting. This is a large, lively, casual Southern room, with the energy of families, travelers, and locals eating in the same current. The craft does not ask for quiet. It asks for a line that keeps moving and a plate that arrives tasting like the house.
The restaurant marks its 100-year centennial in 2025, and that date lands because the method has stayed close to the bench. Lilly’s sons now work as pitmasters within the same family operation, carrying the smoke discipline forward rather than treating history as a finished chapter. Decatur is part of barbecue vocabulary for smoked chicken with Alabama white sauce.
