Weihong Zhang came to the bench after a career in biochemistry, a shift that still reads through the café’s method: sourcing, roasting, cupping, brewing, then teaching the cup back to the person holding it. He founded BlendIn Coffee Club here in Sugar Land after leaving the lab, with Xuan Zhou shaping the presentation of the first shop and its interiors. The café opened on November 17, 2017, in a former bank building, and from the beginning it treated coffee as a material to be understood before it was served. Zhang develops the company’s roast profiles and works across roasting, brewing and education, a range that later carried him to the 2024 US Brewers Cup, which he won before representing the United States at the World Brewers Cup. Floor-to-ceiling windows open the former bank building toward a grassy lawn; inside, the palette is bright, contemporary and Nordic-inspired, with white-and-wood seating and a spare line to the furniture. The old drive-up ATM stations became an outdoor patio, a small act of reuse that suits the place: the structure remains legible, but the pace has changed. Counter service keeps the exchange close. A guest can arrive for a latte, sit with drip coffee, or ask after a coffee from Burundi or Panama and be pulled gently toward the method. Zhang’s next move is still the same one that built the house, calibrating roast and brew until the coffee in Sugar Land carries its own argument: Chevas SL 28, Frinj Pacamara, or a simple espresso across the counter.
