The room was formed in 2024 by merging the award-winning Caroussel with the hotel’s bistro, so classical cuisine and easier urban classics now share one kitchen. International influence, Saxon tradition, and French bistro forms move through the menu, and every plate is served on original Meissen porcelain.

    Caroussel held Dresden’s first Michelin star for close to three decades, and two Gault & Millau toques sit beside that record. Those markers matter less as decoration than as pressure. A kitchen like this has to make repetition feel alive, course after course, while keeping the gesture small enough for the plate to remain precise.

    Meissen porcelain and French bones

    Classical dishes run at midday and again in the evening, while the gourmet menus are held to Tuesday through Saturday evenings, at four courses or five. That split means the method has to hold at two different speeds. The house was built in 1730 by the Dresden master builder Johann Gottfried Fehre, who also raised the church next door. The atmosphere is formal without noise. That matters at the pass. In a quiet room, a late plate has nowhere to hide, and a sauce that has waited too long announces itself before anyone speaks.

    The hotel’s wider house keeps the same register: a winter garden for breakfast, a Palais Bar under Waldemar Bornemann, and a vaulted cellar that once stored wine and food and now serves as a residents’ bar and smokers’ lounge.
