French discipline on a tropical pass
The kitchen at L’Eveil des Sens, the gastronomic restaurant of the Blue Margouillat Seaview Hotel above Saint-Leu bay, is run by Chef Marc Chappot, from Haute Savoie. The amuse-bouches arrive while the last light is still catching the glass, and the meal moves from there into candlelight. His brief is a métissage: rigorously selected fresh product, delicately lifted by local spice. Curcuma brings earth and colour. Cotomili pulls the line toward the herbaceous. Cannelle and gingembre give warmth without asking a sauce to turn sweet. That is harder than it sounds in this climate, because heat and humidity move the palate, and a spice held a moment too long takes the plate away from the fish underneath it.
A market menu and a vegetal one
The programme runs à la carte alongside a market-driven gastronomic menu that changes with what the day gives. A five-course Vegetal menu sits beside it, built from coastal fish, garden herbs and local produce, and it is not a concession at the end of the list but a separate argument about what vegetables can carry. The kitchen’s métier is restraint: a sauce reduced enough to hold, a spice kept in proportion, a fish cooked so the perfume reads as seasoning. Around dinner the house keeps other hours too. Breakfast moves from classic table service to an exotic buffet with pêi jams of letchi, papaye, goyavier and tamarin, and the afternoon turns to lighter cooking beside the pool.
La Cave du Blue and the room under the varangue
The cellar gives the room its second discipline. La Cave du Blue holds more than 1050 references across wines, champagnes and spirits, with Cheffe Sommelière Vanessa Bonadio running pairings from a dedicated tasting space. Scale matters in a small tropical restaurant, because acidity, sweetness and oxidation all have to be read against spice as well as against the dish. The room itself stays intimate, held to 30 or 35 covers, so the pass and the floor keep contact rather than letting the evening turn anonymous. Service settles under the varangue or around the pool, with jazz low in the background and candles doing the rest. From June to September, humpback whales pass the bay below.
The only Relais & Châteaux on the island
Blue Margouillat is the sole Relais & Châteaux property on La Réunion, and the restaurant carries that standing rather than borrowing it. Recent work funded through the Fonds Européen de Développement Régional added a new dining space with a wine and cheese cellar, enlarged room terraces with Creole facade work, and two pool suites. The night usually ends the same way, with tea, coffee and an Epicures digestif, a rhum arrangé from La Cave du Blue.
