    Gravity guides old-vine Mencía

    • Falstaff Winery - 5 Stars · 2026

    Fruit moving downhill by design

Grapes descend through concrete before they meet the tanks; Ricardo Pérez Palacios, winemaker at Bodega Descendientes de J. Palacios in Corullón, Villafranca Del Bierzo, works from that decision. The bodega began in 1999 as a family project, with Ricardo and his uncle building a cellar around old-vine Mencía, Bierzo ground, and the patience required by slopes that do not forgive haste. His training in Bordeaux sits beside a more local inheritance: Corullón, Villafranca del Bierzo, and the repetition of work carried out across the same hillsides season after season. The family name matters here because the cellar is not treated as an isolated address. It is a continuation of hands, parcels, and judgment, with Ricardo running the work inside a shared structure rather than presenting himself apart from it. The house’s known signatures, Pétalos, Corullón, Moncerbal, Las Lamas, and San Martín, read less like a hierarchy than a practical map of place. Each wine returns to Mencía, to slate, and to the decision to keep the cellar attentive rather than forceful.

    Old Mencía on steep parcels

The method begins outside, across more than 27 hectares of old, indigenous Mencía vines around Corullón, divided into approximately 200 small parcels. Some sites rise above 900 meters, on slopes where the hands matter because machines cannot do the same work. The farming is biodynamic, with preparations including horn manure 500 and horn silica 501 used in the vineyard program, and the cellar follows with low-intervention choices: native yeasts, ambient fermentations, and no cooling devices where the ferment can move at its own pace. The building supports that discipline. Designed by Rafael Moneo, it is a gravity-flow winery of around 7,200 m², organized as concrete volumes set into the hillside. Grapes enter high, then move down toward fermentation tanks 20 meters underground. The point is not theatrical architecture. It is less pumping, less handling, and a cleaner line between fruit and vessel. Mencía carries the core, with Alicante Bouschet and local white varieties appearing where the wine asks for them; Corullón includes about 6% white grapes.

    Concrete, patios, and Bierzo light

The cellar feels quiet in the way working wineries can be quiet: not hushed, but ordered. White concrete volumes sit around three patios, and the production route gives the place its rhythm, from reception to fermentation to bottling. A gallery opens to the green Bierzo hills, so the room never quite lets the vineyard leave the frame. Inside, the surfaces stay industrial and clean, softened by the scale of the landscape beyond them. The building was constructed between 2013 and 2017, with green roofs over the production nave following the contour of the mountain rather than announcing themselves from it. That restraint suits the wine program. The cellar does not compete with Moncerbal or Las Lamas; it gives those names a way to arrive intact.
