Salon’s first vintage was 1905, made by Eugène-Aimé Salon from Chardonnay grown in Le Mesnil-sur-Oger. The house still makes one Champagne, a Blanc de Blancs from a single selected harvest and a single village.
Twenty plots in one village
Salon identifies a one-hectare plot called the Salon garden and nineteen other small plots in Le Mesnil-sur-Oger. The village source stays constant; the harvest year changes. The house releases the wine only when it judges that year suitable.
Cellar time
The producer says its wines spend an average of ten years in cellar. That is a house average, not an exact interval for every vintage. Salon’s published 2015 and earlier releases offer different harvests of the same Chardonnay and village focus. House visits are reserved for wine professionals.
