Smashables before the room fills

The first round is built for pace, not ceremony. Boilermaker in Siolim, Goa, treats the drink as a social object: cold, quick to read, and easy to return to without turning the night into a tasting seminar. The bar was founded by Nakul Bhonsle of the craft brewery Great State Aleworks, which supplies its taps, and by the mixologist Pankaj Balachandran of Countertop India and the closed Bar Tesouro, and they built the list around drinks meant to be finished in under twelve minutes. Macleigh Rey Fernandes runs the bar as head bartender, pacing a night from light to spicy without letting it tip. That grammar meets a Goan room with raw plaster, music, beer, feni, and cocktails that do not ask to be admired at arm’s length. The bar’s recognition in Asia’s 50 Best Bars, ranked 30, belongs to this address and this program. The house has found a way to make local flavor move at bar speed.

A list built for repeat orders

The program’s house word is “smashable,” and the list follows through on it. Drinks are designed to be refreshing, sessionable, and finished quickly enough that the guest can order again without fatigue. The structure helps: half-sized serves sit under “Say Hello to My Little Friend,” while “Smashables Only” keeps the center of gravity on rapid sippers rather than solemn signatures. Siolim Salsa brings Patrón Silver with grapefruit and pineapple. Mango No. 5 folds whiskey, mango, coconut, and lemon into a tropical sour register. Mexican Picante carries Patrón El Alto with spice held in balance rather than used as a dare. The classic boilermaker idea, spirit and beer moving together, remains part of the name’s method. Local cues matter here, especially feni, cashew beer, mango, and muskmelon, but the point is not a catalogue of regional references. The point is fit. A drink that belongs in this room has to survive laughter, music, warm light, and the hand reaching back for the glass.

The back bar and the beer taps

The beer program gives the cocktails a second spine. Boilermaker runs a 12-tap lineup from Great State Aleworks, with Barrel Aged Scotch Ale at 8% ABV among the heavier pours, alongside brighter beers such as Bad Habit and Eastside. Break Shift IPA was brewed for the team, a bartender’s beer in the most literal sense: something shaped around the people working the bar as much as the people leaning on it. That matters in a place using the language of a dive bar without letting the details go slack. Glassware stays in character. The pacing stays light enough to keep conversation moving. The wine program is minimal, which reads less like absence than discipline; Boilermaker puts its weight behind beer, spirits, canned serves, and short cocktails made for the tempo of the room.

Raw plaster, warm light, working noise

The room carries the work loudly. Laughter catches against raw plastered walls, warm lighting softens the industrial edges, and the bar moves with the charge of a house party that happens to have a serious back bar. Service is casual, but the casualness is handled. Staff pace the drinking from lighter starts toward spicier finishes, so the night builds rather than blurs. That is where the trade sense sits most clearly: not in a single garnish or a lecture at the counter, but in a sequence that lets a guest trust the next order. If the room has a closing image, it is not an award plaque. It is Siolim Salsa moving across the counter while the 12 taps keep their own rhythm behind it.
