    The room uses stone, wood and height to frame the work without crowding it. Cancook moved into a larger, more central space to make this sequence possible, and the design now gives the meal a measured sense of theatre: ingredient display, kitchen station, upstairs dining room, open counter. The noise stays low enough for the explanations to carry. Service has the tone of an upscale casual house rather than a sealed room, but the choreography is formal where it needs to be. Plates cross the pass in courses, not as spectacle, and the counter keeps the hands visible at the moment when garnish, heat and sauce become final decisions.

    The garden stays in the method

    González has said, “We have several gardeners who work for us,” placing Cancook’s refinement outside the dining room as well as inside it. The restaurant’s next plate still begins before service, in the garden work that feeds La Fresquera.
