Charcoal as the first decision

Tacos built for the pass

Tacos al pastor carry the most direct signal of the house; shrimp tacos and cauliflower tacos give the range, one leaning into sweetness and snap, the other into roast, avocado crema and pickled onion. Tuna tostada brings the counterpoint, a crisp base, sashimi-grade fish, heat and mango salsa. A chicharrón quesadilla goes further, larvae and crickets included, and suckling pig quesadillas arrive with achiote.
The beverage program keeps close to the plate. Ten signature cocktails are built around tequila, mezcal and ingredients such as shiitake mushrooms, habanero and corn, so the bar does not stand apart from the kitchen. It works like another station, handling smoke, spice and acidity in liquid form.
The room under Quetzalcoatl
The room is not quiet, and it is not meant to be. Carnal's decor draws on cut lace, ceremonial masks and the serpentine curve of Quetzalcoatl across the ceiling, a setting with colour, warm light and enough pressure from the crowd to keep the pass awake. Handpainted stoneware menus suit the looseness of the format; the table can begin with guacamole and totopos, move into raw prawns with chile, coriander, lime, cucumber and red onion, then settle into tacos without a formal order of ceremony. The counterpoint is discipline. In a lively room, the craft has to be legible fast: tortilla, salsa, protein or vegetable, acid, heat. If any part drifts, the plate shows it.
Where the craft holds
Carnal matters most when the gastrobar energy does not blur the method. The house has built its recognition around bold tacos and antojitos rather than ceremony, and that leaves the kitchen exposed in the right way. A cauliflower taco has nowhere to hide. Neither does tuna tostada at Carnal.
