Pinot kept close to the hand

Pinot Noir sets the pace for Catherine Marshall, Winemaker at Catherine Marshall Wines in Stellenbosch. She works from a small, premium designer wine company with its roots in Elgin, where she is also a shareholder, and the role is not separated from ownership or consequence. The cellar began in 1997 as Barefoot Wine Company, one of the Western Cape’s early garagiste micro-wineries, before taking Marshall’s own name. That change matters because the wines have always carried a maker’s signature rather than a house style passed through committees. Marshall graduated from Elsenburg in 1991, then spent time in local cellars before building a label around cool-climate fruit, Pinot Noir first among it. The old Barefoot name held a harvest custom too: friends and family gathered for BWC foot-stomps, pressing grapes by foot in a communal ritual that suited the scale of the cellar. The method has tightened with time, but the long way remains visible. Growers, slopes, vessel and vintage stay close to the bench.

Sandstone soils and buried clay

The program rests on cool-climate Elgin and Stellenbosch fruit, with Pinot Noir, Chenin Blanc, Sauvignon Blanc, Riesling, Grenache, Merlot and Cabernet Franc among the varieties named by the house. Marshall’s Pinot Noir on Sandstone Soils states the argument plainly: origin before ornament. Elgin fruit reaches harvest 3 weeks to a month after Stellenbosch and Paarl, preserving acidity while the grapes finish their work on the vine. In the cellar she uses natural yeast, avoids filters, and keeps the wines vegan-friendly. Pinot Noir spends 12 months in Burgundian oak barrels, a frame for red fruit, earth and structure rather than a cover for them. Clay also has a place in the method. Qvevri, buried in the ground for temperature control, bring an older vessel into a Cape cellar, and Chenin Blanc is fermented in clay for texture and mineral line. The range includes still reds and whites, dessert wine, amphora work and skin-contact bottlings, all held to the same small-scale discipline.

A quiet tasting room for cool fruit

The tasting room in Stellenbosch keeps the mood close to the wines: quiet, art-focused, and scaled for attention rather than traffic. This is not a cellar that asks the room to perform. The counter gives space to the glass, the label, the sequence of a flight, and the small shifts between Elgin’s cool-climate whites and the red-fruited line of Pinot Noir. In that setting, Marshall’s work feels less like a catalogue than a set of decisions repeated until they become legible: sandstone, natural yeast, clay, Burgundian oak, the grower relationship that starts before the grapes arrive.
