Shoulders before the cellar

Hand-picked grapes still leave the vineyards on men’s shoulders before Alain Emery, Winemaker at Cave Alain Emery in Aigle town centre, brings them back toward the cellar. He has managed the estate since 2007, carrying a family line that began at the address in 1883 and now runs through five generations. The work asks for two kinds of attention: the practical reading of fruit, weather and vessel, and the restraint of an oenologist who knows when not to press too hard on inheritance. Emery’s own phrasing stays close to that responsibility: “For 5 generations, our family has been working on their vineyards with great commitment and creates wines that reflect our traditions.” At this house, that is less a motto than a working limit. The vineyard comes first, the cellar follows, and each vintage has to belong to Aigle without breaking the older cadence of the domain. His signature selection, Dil’Eme, arrived in 2012 as a named expression inside the Chablais range, giving clearer shape to the family’s wines without separating them from the same plots, barrels and cellar discipline.

Chasselas through old wood

The estate works 5.5 hectares of vines in Aigle, in about twenty plots within the Chablais AOC, with plantings led by Chasselas at 60%, followed by Pinot at 20% and Gamay at 10%. Those numbers explain the bench-side logic of the cellar: white wine is not a side of the program, it is the spine. Chasselas carries the local accent, and the house keeps that accent close through traditional handling, estate fruit and old vessels. The Chasselas Grand Cru Aigle is made with over 100-year-old barrels, a choice that places texture and memory in the same frame. Since the 1990s, the family has described its vineyard work as reasoned and nature-friendly, with attention to the environment and biodiversity around the vines. The production is conventional in the broad sense, but the method depends on proximity: plots facing the Dents-du-Midi, fruit grown around Aigle, and a cellar where inherited practice has not been tidied into novelty. Dil’Eme sits within that structure as a selected line of Chablais wines, not a departure from it.

The cellar near the château

The cellar, shop and terrace sit in the historic centre of Aigle, a short walk from Château d’Aigle, close enough that the town’s wine history is not scenery but daily context. Tastings stay conversational, often moving between the cellar, the terrace and the vines, with regional food beside the glass rather than ceremony around it. The room is warm without performance; the work remains the point. Outside, the vineyards pull the visitor toward the surrounding slopes and the Dents-du-Midi, and the house has built wine tourism around that landscape with La Clé des Vignes, Apéro-Vignes and AP(AIR)O helicopter tastings on nearby glaciers. The cellar won regional recognition for Innovative Wine Tourism Experiences in 2019, but the stronger thread is continuity: Aigle wines poured where the family still works them.
