Vine cuts before the cellar work

Spring begins with vine cuts in crackling snow; Christine Marti-Wenger, winemaker at Cave chez Violaine in Salgesch, carries that winter discipline into the cellar. Rolf Marti-Wenger, winemaker beside her, holds the vineyard side of the house with the same closeness, working vine cultivation, sales and customer care while Christine leads vinification, marketing and customer relations. Their work belongs to a family line rather than a detached atelier. Christine’s grandparents began the business; the second generation became independent in 1980; the third generation took over in 2007. Since 2014, Christine has worked here as vigneronne and member of the cellar team, holding the practice at the point where seasonal judgement meets the bench-side decisions of wine. Rolf’s formation is similarly domestic in the strongest sense: family succession, vineyard discipline and cellar practice have shaped the method. Together they cultivate 3 hectares, small enough that choices in the rows remain close to the final bottle. The estate keeps vine care, winemaking, bottling and direct sales in its own hands.

Three hectares kept in house

The method starts in sustainable cultivation, with soil managed as a living part of the wine rather than a surface to be forced. The Marti-Wengers work according to integrated production, with attention to biodiversity and ecosystem stability across the vineyard. That language can sound broad until it meets the scale: 3 hectares, watched through spring cutting, summer heat and the autumn scent of fermenting must. In the cellar, Christine’s own words keep the emphasis on finishing and time: “With careful and controlled finishing, with a lot of heart and experience, we vinify our wines and let them mature.” Red wines have a particular place in the program, including single-varietal red wines. In 2023, Cave Adamare was Swiss champion in the category of single-varietal red wines, a precise recognition attached to that house’s red-wine work. The Grand Cru Pinot noir Salgesch AOC Valais carries another measure of discipline, with Salgesch Grand Cru rules including vineyard yield regulation at 800 g/m2, inspections and blind tastings by professional tasters.

Evening sun at the tasting table

The cellar at Cave chez Violaine keeps the scale of a family winery. Guests come close to the vineyard and the barrels, not through spectacle, but through the ordinary sequence of work: rows first, cellar after, tasting when the wine is ready to speak in glass. The room is conversational, with the quiet of a Valais cellar and the comfort of a table set for tasting after vineyard labor. Groups of around 25 can move through vineyard and cellar with the Marti-Wengers, then sit with the evening sun and taste with all senses, as the house describes its own hospitality. Salgesch remains present in the room: a wine-growing village, a Valais AOC setting, and a cellar where the family’s work returns to Pinot noir, fermenting must and the decisions made by Christine Marti-Wenger and Rolf Marti-Wenger.
