His presence here belongs to a longer Valencian line: he began in the early 2000s leasing Piscina de Barxar near Gandia, opened Arrop in Gandia in 2004, earned a Michelin star there in 2007, and moved to Valencia to open Ricard Camarena Restaurant in 2012. That restaurant received a second Michelin star in 2018, but Central Bar works in another register. The menu keeps to small plates, raciones and bocadillos, a format that suits a market day better than a long sequence. Agua de Valencia appears in a more dressed version, with orange juice, Cointreau, Absolut vodka, Malfy gin and cava, but the bar program stays close to the food rather than pulling attention from it.
The room is really a counter, high stools and an open kitchen view folded into Mercado Central’s larger current of voices, bags, fish, fruit and morning decisions. Central Bar sits at puestos 105 to 131 in Plaza de la Ciudad de Bruges, inside the art nouveau market that draws thousands through its aisles. The service has the pace of a working market rather than a dining room arranged for hush. Plates move quickly. The pass stays visible. The proximity matters because the cooking is simple enough to expose weak buying. Here, a bocadillo, a plate of bravas or calamares a la plancha has to meet the noise around it and still taste of its materials.
