Champagne Doyard is a family grower in Vertus with more than 10 hectares across the Côte des Blancs and Aÿ. Chardonnay provides the main line of inquiry: multi-vintage Vendémiaire, non-dosé Révolution and the single-site Clos de l'Abbaye are different constructions, not variations of one recipe.
The enclosed parcel
Clos de l'Abbaye comes from about half a hectare of Chardonnay planted in Vertus in 1956. Doyard describes low yields, horse-worked soils, first-press juice, fermentation in used oak, no chaptalization and no malolactic fermentation for this cuvée. Its reported dosage is 2 g/L. Those decisions aim to preserve the parcel's character without imposing that method on the estate's entire range.
