Soil first in Vertus

The grass stays between the rows, and Pascal Doquet, winemaker at Champagne Pascal Doquet in Vertus, works from that decision before the cellar ever has its say. His role here carries a date, 1982, and a line through the family domaine Doquet-Jeanmaire, where he worked before establishing the independent estate under his own name in 2004. The throughline is Chardonnay handled by parcel, not folded into a single house profile for ease. Premier and Grand Cru sites do the structural work, with Blanc de Blancs as the central discipline. Doquet began working the soil without herbicides in 2001, then carried the estate through organic conversion after independence; certification followed in 2010. That chronology matters because the wines are built from viticulture rather than correction. He treats grass cover as part of the method, a way to feed soil life and read the balance of each place. The bench, here, is the vineyard itself: Vertus, Le Mesnil-sur-Oger, the Coteaux Vitryats, and the decisions made before a cluster reaches the press.

Parcels kept separate

The domaine farms 8.69 hectares, with 60% in the south of the Côte des Blancs and 40% in the chalky Coteaux Vitryats. Chardonnay covers 8.2 hectares; Pinot Noir accounts for 0.5 hectares. The average vine age is 46 years, enough time in the roots for site character to arrive with weight rather than suggestion. Doquet does not purchase grapes, so the range begins and ends with estate fruit. Harvest happens by hand, with selection made before fermentation rather than corrected later. In the cellar, the method remains restrained: indigenous yeasts, enamel-lined tanks, some neutral oak, and parcel vinification. In 2016, the estate began using indigenous yeasts for the prise de mousse as well, extending the same logic into the second fermentation. About 50% of the wines are raised in wood, with about one-third of production aged in used oak barrels. Malolactic fermentation takes place in tank, followed by 5 months sur lie. The portfolio includes three non-vintage Blanc de Blancs cuvées, a Rosé using Pinot Noir from Vertus and Bergères-lès-Vertus, and Cœur de Terroirs vintage wines drawn by village.

A quiet grower cellar

The cellar in Vertus has the scale of a grower estate rather than a polished visitor theatre. Outside it, the vineyards carry grass, flowers, insects, birds, and the small movements of a place farmed as living ground, not a production surface. The room is quiet because the work asks for it. Tanks, barrels, bottles on lees, and the pressure of the second fermentation make their own pace; nothing in the setting needs to hurry the wine along. The estate produces roughly 75,000 bottles per year, a figure that sits behind the more important fact of control: the same hands farm, select, ferment, and age the fruit. That is where the house’s conviction shows. It is present in Champ d'Alouettes Grand Cru Extra Brut, one of Doquet’s signature wines, and in the continuing parcel work behind Cœur de Terroirs.
