For Larmandier-Bernier, vineyard practice and fermentation are joined decisions. The Vertus estate reports biodynamic cultivation since 1999 and organic certification since 2003. It grows chiefly Chardonnay, with smaller amounts of Pinot Noir and Pinot Gris.
Fermentation and site
Grapes are picked by hand and pressed gently. Fermentation starts spontaneously with indigenous yeasts in Stockinger casks and vats, and the wines mature on their lees. The house does not reduce that method to one interchangeable blend: Latitude, Longitude, Terre de Vertus and Vieille Vigne du Levant distinguish different origins and expressions of Chardonnay.
Beyond Blanc de Blancs
The range also includes a Pinot Noir Rosé de Saignée and Vertus Rouge, a still Coteaux Champenois. Pierre, Sophie and their family receive estate visitors in Vertus by appointment on weekday mornings.
