Crayères as a Changing Assemblage
Champagne Éric Rodez's Cuvée des Crayères is a multi-vintage Ambonnay assemblage of 60% Pinot Noir and 40% Chardonnay. The producer describes about fifteen component wines, with oak vinification and reserve wine both shaping the result.
Read the edition, not a permanent formula
An older producer page gives 90–95% small-oak vinification and 70% reserve wines. The current 36th-edition page gives 80% small oak and 65–70% reserves. Those differences are the point: the technique is consistent in emphasis, but proportions belong to individual releases. It would be misleading to assign either set of figures to every bottle.
