The disgorging follows the moon cycle; Olivier Langlais, winemaker at Champagne Solemme in Villers Aux Noeuds, keeps that timing inside a small grower estate. His formation came first through inheritance, a long line of Champagne growers for whom the vineyard was the center of the work rather than an asset held at a distance. In 2006, he and Catherine Langlais took over the family vineyard. In 2009, he created the Solemme brand, giving the inherited estate a name of its own and a clearer direction at the bench, in the vines, and in the cellar.
Langlais’s language for the work stays plain: simplicity and honesty in the wines, with Champagne treated first as wine. The soils shift between chalk, clay-limestone, silt, and sand, and Langlais lets those changes carry weight rather than sanding them down in the cellar. Fermentation takes place in stainless steel tanks. The house works without chaptalization, filtration, or added yeast, and the wines age on lattes for an average of 36 months. Disgorging comes without added sugar, except for Plénitude de Solemme, the extra brut assembled from reserve wines selected for freshness. Ambre de Solemme gives the Meunier focus a sharper edge: 100% Pinot Meunier, Brut Nature, drawn from the estate’s chalky ground. The method is not ornamental. It is a way of keeping cellar handling legible in the glass.
