He works from Ras El Harf, in the Lamartine Valley, where the estate has given his practice a fixed point since the project began in 1990. Founder first, then owner and winemaker, Gerges has kept vineyard judgment and cellar restraint close enough to answer each other: when to pick, how much to handle, and when to leave the fruit alone. The work grew from abandoned postwar land into a winery tied to local agriculture rather than a borrowed cellar language. His method reads as stewardship before signature. Lebanese soil, agricultural memory, and the rare Sobbaghieh grape carry the weight here, with the maker’s hand used to protect their accent rather than press it into another register.

The vineyard composition gives the program its shape: 60% Cabernet Sauvignon, 30% Sobbaghieh, and 10% Chardonnay, planted on gravely soils at 900 meters. Manual harvest protects the condition of the fruit before fermentation begins. Wild yeast keeps the work tied to the site. Minimal intervention is the cellar discipline, a way of preserving freshness, texture, and structure without giving the wines a heavier frame than the fruit can carry. Jardin Secret is the clearest named expression of that method, built around Sobbaghieh as a single wine rather than a talking point. Select reds, including Sobbaghieh, spend six months in old oak, enough time for the wood to lend spice and depth without becoming the subject. The house also makes whites, rosés, reds, and Arak Soukara, but the rare black grape remains the defining material on the bench.

The cellar and vineyard sit within Mount Lebanon’s wider frame, but the working address is more exact: Ras El Harf, Bhamdoun, in the Lamartine Valley. That precision matters, because the place is not treated as a backdrop or a borrowed romance. Pine-covered slopes and gravely ground are not scenery here; they are part of the method, shaping drainage, exposure, and the rhythm of harvest before any decision reaches the cellar. Because Gerges holds the owner and winemaker roles together, the distance between field decision and cellar consequence stays short, practical, and direct. What is noticed among the vines can be carried into the room without translation. The same discipline that governs the fruit governs the room: restraint, close handling, and a preference for continuity over novelty.
