Reading botrytis from the hill

The decision waits on weather: Bérénice Lurton, winemaker in advisory role at Château Climens in Barsac, watches botrytis as the condition that sets the work in motion. She has said the importance lies in its development under the right weather conditions, a sentence that keeps the vineyard, not the cellar, at the center of the method. From 1992–2022, Lurton served as manager and proprietor of the estate, carrying a long chapter of responsibility for a Barsac house whose wines ask for patience before they ask for intervention. Since 2022, she has remained close to Climens in an advisory role, after Jean-Hubert Moitry and his family chose the property for its next chapter.

Her own language for that handover is telling without needing ornament. “I have always considered myself more as the temporary guardian of Climens than as its owner…” At the bench-side of wine, that distinction matters. A guardian reads before acting; a proprietor may be tempted to impose. At Climens, the known line is one of stewardship, with Lurton’s Political Science Institute training sitting behind a career that became practical, seasonal, and bound to the timing of noble rot.

Semillon held to one voice

Château Climens works in Barsac AOC with Semillon, and the estate is known for 100% Semillon sweet wines from biodynamically farmed hillside vineyards. That single-variety discipline narrows the field of choices and sharpens the judgment required from the vineyard team. There is no aromatic counterweight named here, no blend to lean on in the language the house makes public. The grape carries the site, the weather, and the patience of picking.

The production philosophy is biodynamic, and the scale is small. In a place where the wine focus is dessert, sweetness is not the craft by itself; concentration, acidity, botrytis, and timing have to arrive together. The estate’s hilltop setting on the Barsac plateau, with gently sloping limestone vineyards around the château, gives the work its physical frame.

The quiet of the tasting room

The cellar and tasting room at Climens keep a restrained pace, more chateau than showroom. The atmosphere is elegant and refined, with private and cave tastings set inside a classic property surrounded by vines. Quiet matters here. Sweet wine carries its own density, and Barsac asks the taster to give time to texture, acidity, and the way Semillon changes in the glass.

Outside, the vineyards slope away from the hilltop on limestone ground. Inside, the room stays intimate, shaped for attention rather than volume. The setting does not need to press its case; the plateau, the cellar, and the glass do that work in sequence.

Stewardship after the handover

Lurton’s present role keeps her near the estate while the Moitry family holds the next responsibilities. Her words about shared human values, enthusiasm, and vision place the transition in the language of custody, not disruption. The thread to follow remains the same one she named plainly: botrytis under the right weather conditions at Château Climens.
