Since the 1990s, Guillaume Pouthier has read the fruit before the cellar takes over. As winemaker at Château Les Carmes Haut-Brion in Pomerol, he works from a Pessac-Léognan estate where Cabernet Franc carries unusual weight in the blend, alongside Merlot and Cabernet Sauvignon. His post is not confined to one bench. Pouthier is also Managing Director, a role he has held since 2012, so vineyard decision, cellar method, and estate direction sit close together in his hands.

Guillaume Pouthier has described the work plainly: “We make wine in relation to a particular place.” At this château, that sentence has practical consequences. The property is an urban vineyard estate, with parkland, a 19th-century château, and a contemporary winery designed by Philippe Starck. The setting could invite spectacle. Pouthier’s stated discipline points the other way, toward restraint, timing, and a finished wine that keeps the site legible.

Cabernet Franc, amphorae, whole bunch

The program is built around still red wine in the Pessac-Léognan appellation, with Cabernet Franc, Merlot, and Cabernet Sauvignon as the named varieties. The estate is known for a high proportion of Cabernet Franc, a choice that changes the register of the cellar: perfume, frame, and freshness matter as much as mass. Pouthier’s work here uses amphorae and whole bunch fermentation, methods that ask for close judgment rather than recipe. Stems can carry architecture or abrasion. Clay can soften extraction or leave a wine too open. The decision belongs to the vintage, not to a slogan.

The house’s small scale sharpens that responsibility. Sustainable farming is the stated philosophy, and the cellar choices follow the same argument: do enough, do it at the right moment, and do not bury the estate under technique. Pouthier’s named signature wines, 2024 Les Carmes Haut-Brion and 2025 Les Carmes Haut-Brion, show the simple grammar of the château’s work. The name remains fixed. The year changes. Each release becomes a separate reading of the same ground.

A barrel hall like a boat on water

The cellar sits inside a place that keeps two eras in conversation. Outside, the 19th-century château and its parkland give the estate a quiet, enclosed quality, an urban green haven rather than a remote vineyard. Inside, the Starck-designed barrel hall has the form of a floating boat, set against the older architecture without trying to disappear into it. The effect is not rustic. It is controlled, almost hushed, with the cellar made visible as a working instrument.

In that room, the craft is not only in the vessels or the blend. It is in the sequence of decisions that moves fruit from vineyard to fermentation, from amphora to barrel, from a particular year into bottle. Pouthier’s other line, “That's why we are doing this job because we love to share wines,” gives the work its social end without loosening its discipline. The bottle leaves the cellar, but the measure remains Les Carmes Haut-Brion.
