One set of hands from vine to cellar

Patrick Honnef keeps vineyard and cellar decisions in one set of hands as winemaker at Château Mukhrani in Mtskheta, working in Kartli from a restored royal chateau founded in 1878 by Prince Ivane Mukhranbatoni. Patrick Honnef carries a technical base from Wine Management and Winemaking in Heilbronn, Germany, into a post that joins farming, cellar work and direction rather than separating them into departments. His own description is spare: “I'm the winemaker and the director of Chateau Mukhrani.” At this house, that means watching the fruit before it enters the cellar and taking responsibility for the decisions that follow after it does. The place asks for that breadth. Château Mukhrani sits in the central part of Georgia, with underground cellars, vineyards and gardens arranged around the restored 19th-century chateau. Its frame is Georgian and French at once, a royal estate with local varieties at the bench and a cellar culture shaped by contact with Europe. Honnef’s caution fits the address: “If we lean too much to the west, we're in trouble. And if we lean too much to the north, we're in trouble.”

Kartli fruit, qvevri and still wine

The program works across Saperavi, Goruli Mtsvane, Rkatsiteli, Shavkapito, Tavkveri, Chardonnay and Sauvignon Blanc, with still red, still white, dessert and skin contact wines in the frame. The house farms with an organic philosophy, and its production scale is medium, which matters less as a category than as a discipline: there is enough breadth to require systems, and enough proximity for the winemaker’s hand to remain legible. Qvevri wines sit beside classic tastings, not as a costume of heritage but as one method within the cellar’s range. Honnef’s named signatures make that range plain: Goruli Mtsvane 2023, Qvevri 2019 and Shavkapito 2015. Each bottle names a different pressure point. Goruli Mtsvane gives the white program a Georgian spine; Qvevri 2019 puts vessel and vintage in the foreground; Shavkapito 2015 holds attention on a red grape that belongs to the region’s vocabulary.

The cellar beneath the chateau

The cellar here is part of the architecture, not a backstage room hidden from the estate. Visitors move through a restored 19th-century royal house, underground cellars, surrounding vineyards and gardens, with the tasting room held in the same quiet register. The atmosphere is formal without glare: stone, garden, vine rows, and the slower temperature of a cellar built for wine rather than spectacle. Château Mukhrani’s recognition gives the address a public marker, including a place at 47 in The World’s 50 Best Vineyards and 4 awards counted across current and previous year results. The measure is still in the glass. Honnef has to keep the estate’s French inflection from overpowering its Georgian ground, and keep the Georgian inheritance from becoming static. That tension is where the work lives. End the line with Qvevri 2019, then return to Shavkapito 2015.
