Giuseppe was followed by Quinto Chionetti, then Andrea Chionetti, who pushed the quality and standing of Dogliani DOCG. Nicola now works as the fifth generation in that line, with the name on the label and the name at the bench held together rather than separated into brand and maker. His career history stays with Chionetti alone, which gives the work a narrowness that suits the estate. This is not a house built on breadth. Dolcetto held to its crus
The estate farms 15 hectares of vines under organic certification, with organic and biodynamic practices guiding the vineyard work. Dolcetto carries the program, especially in Dogliani DOCG bottlings from San Luigi and Briccolero, where the wines are 100% varietal. San Luigi sits in a valley with south and southwest exposure, lighter soils, and a sheltered position, conditions that Chionetti reads for freshness, mineral line, and aging potential. Briccolero accounts for approximately 6 hectares and gives one of the estate’s most structured Dolcetto expressions. The cellar keeps the imprint direct. San Luigi is harvested and fermented in September, then aged for approximately one year from harvest until sale, and the wine is not filtered. La Chiusa, the Langhe DOC Nebbiolo tied to Nicola’s signature, is harvested and fermented in October, then aged for more than one year with time in untoasted large French oak barrels. The Riesling from Martina, at approximately 600 meters, rests for 8 months on lees in temperature-controlled steel tanks.
