Fruit comes to the bench as a practical problem before it becomes a label; at Chronic Cellars in Paso Robles, Jake Beckett works as winemaker with that order intact. Born in 1976, Beckett learned the language of production inside Peachy Canyon Winery, where family life and cellar life shared a schedule. Harvest was not an abstraction there. It was cadence, divided work, and the repeated contact between vineyard, cellar, and bottle that fixes a maker’s sense of timing.

Beckett took on the winemaking role at Chronic Cellars in 2004, carrying forward an apprenticeship built less on distance than on proximity. The work sits in Paso Robles wine country, in the Paso Robles AVA, and the house keeps its tone deliberately unbuttoned: clever labels, blends that resist stiffness, and a refusal to make wine culture feel sealed off from the people drinking it. That informality does not remove the discipline. It changes the door through which the discipline enters.

Blends without the white tablecloth

The program moves across Zinfandel, Syrah, Grenache, Petit Sirah, Viognier, Grenache Blanc, Cabernet Sauvignon and Chardonnay, with still red, still white, still rose and sparkling wines in the house’s range. Those varieties give Beckett a wide bench. Paso Robles can carry generous fruit and structure in the same hand, and Chronic Cellars leans into blends as a language rather than a compromise.

What the house does give is small-scale production, conventional practice, and a cellar identity built around composition rather than around a stated protocol, which leaves the wines to make their own case. A blend asks for judgment at the pass. One lot gives color, another lift, another shoulder; the finished wine has to hold together without hiding its parts. At Chronic Cellars, the label may wink, but the cellar still has to answer to the glass.

The room around the pour

The tasting room keeps a laid-back living room register, with colorful Dia de los Muertos artwork, bluegrass music and a trace of incense in the air. It is intimate rather than staged, a winery room with a patio in Paso Robles wine country and enough quiet for the glass to stay central. The mood is rustic, cozy, whimsical and casual, which suits a house that has always preferred character to polish.

That atmosphere matters because it frames Beckett’s work without overexplaining it. The counter does not ask the visitor to perform reverence. It lets the wines do the quieter work of showing what the blend carries: Zinfandel’s breadth, Syrah’s darker line, Grenache’s lift, the white varieties pulling another register into the program.
