Fruit kept out of the cooperative

The decision was practical before it became a cellar practice: Óscar Aragón, winemaker at Cillar de Silos in Quintana Del Pidio, works from vineyards his father had already held close. He has described the beginning without ornament, grapes once sold to a cooperative in Quintana in 1993, then kept back so the family could make its own wine. At this estate on the northern edge of Ribera del Duero, that choice still gives the work its shape. Amelio Aragón began acquiring parcels in the Burgos region in 1970; the winery opened in 1994, and its first commercial vintage reached the market in 1995. Today the family line remains visible in the division of labor, with Óscar as technical director and winemaker, Roberto Aragón overseeing management and sales, and Amelia Aragón also part of the operation. The estate holds around 70 hectares, chiefly in Quintana del Pidio, with further plots in La Aguilera and Gumiel de Izán. Its old Tempranillo vines, some between 45 and 80 years old, are not treated as romance. They are material, inherited and worked.

French oak and high Ribera fruit

The method here rests on old-vine Tempranillo, locally Tinto Fino, and on restraint in the cellar. Cillar de Silos uses French oak for aging, not American oak, a choice that keeps the emphasis on balance rather than weight. The flagship Crianza spends 12 months in French oak barrels; the young red and rosé are made to hold fruit closer to the surface. Torresilo draws from old vines on sandy clay soils, while Flor de Silos comes from a high plot that reaches 900 meters. Across the estate, the average altitude is 860 meters, enough to slow ripening and keep acidity in the frame. In 2017, the family planted seven hectares with cuttings from local vineyards, a quiet act of continuation rather than replacement. The range also includes single-vineyard wines such as La Viña de Amalio, along with Albillo, bringing a white variety into a house known chiefly for Ribera reds.

Underground rooms for bottle time

The place is split between modern production and the older underground cellars of Quintana del Pidio, restored by the family in 1996. Those 17th-century caves give the estate another tempo. Bottles rest below ground in steady coolness and humidity, away from the movement of the working winery above. The tasting room carries that same measured pace, more cellar than stage, with the village close by and the vineyards pressing the horizon. In the cellar, the language is not expansion for its own sake, but selection: old parcels, French oak, bottle age, and the village district that later informed the Dominio del Pidio project, intended for fermentation in concrete tanks and aging in the old caves. Óscar has named 2005 as the vintage he likes most among the wines made at the winery, for its balance. That preference explains much about Cillar de Silos, especially Torresilo.
