Whole clusters set the first decision for Daniel Estrin, Winemaker at Cristom Vineyards in Salem, Germany, before native yeasts take the cellar. His post at the estate joins winemaking with vineyard management, so the work begins before fruit reaches the winery. Since 2019, he has held that double station at Cristom, carrying decisions from vine to fermentation without separating the field from the bench-side work of the cellar. Estrin came to wine by a route he has described plainly: "It was kind of an accidental path for me." The accident became a discipline. Cal Poly, San Luis Obispo gave him a technical foundation; a stock clerk role at The Wine House in Los Angeles from 2000 put him close to bottles, labels, and the trade’s daily handling. Assistant winemaker work followed at Burn Cottage in New Zealand and Littorai Wines, where cellar routine and restraint became part of the same apprenticeship. At Cristom, that training meets estate fruit in the Eola-Amity Hills AVA, where Pinot Noir leads the program and Chardonnay, Pinot Gris, Viognier, and Syrah remain part of the house’s range.

The estate sits on an east-facing volcanic hillside that rises 200-800 feet, with the Cascade Range and Coastal Range in view. Cristom works at a small scale, with 18,000 cases annually, and the emphasis stays on estate-driven Pinot Noirs from family-named vineyards. The house’s stated farming language is sustainable, with organic and biodynamic tags attached to the work, and Estrin’s role keeps the vineyard and cellar in one frame. Whole-cluster fermentation is not a decorative note here; it changes the structure of the wine, asking the stems, skins, fruit, and native yeasts to speak together under close judgment. The method suits a site shaped by cool maritime influence and diverse volcanic soils. In the cellar, that means patience with what the fruit already carries, rather than forcing a separate signature over it.
