Several passes before the cellar
The harvest passes through the vines by hand, more than once, before Jean-Marc Vincent, winemaker at Domaine Jean-Marc Vincent in Santenay, brings fruit back to the cellar. He has worked this way since 1997, when he and Anne-Marie Vincent founded the domaine and began the slower task of bringing family vineyards back into their own hands. Vincent’s earlier work as president of the Santenay producers association sits behind the domaine without needing ceremony. High density, slow fermentations
The vineyard work gives the cellar its limits. Vincent and Anne-Marie prefer handwork, stopped using heavy tractors, and farm with attention to living organisms and soil balance. Some parcels are planted up to 14,000 vines per hectare, a density that asks more of the vineyard team and less of mechanical convenience. Grapes are hand-harvested through several passes, with ripeness chosen in the rows rather than corrected later.
In the cellar, the white wines receive the same structural seriousness as the reds. Vincent’s phrase is plain: “I construct a white like I construct a red.” Whites are slowly pressed, carefully clarified, then fermented slowly in oak barrels in cool cellars. Reds are partially destemmed according to vintage and plot, pass through pre-fermentation maceration, then about twenty days of slow, gentle maceration at moderate temperatures. Ageing runs for 18 months in 500- and 600-liter barrels. The house works reds and whites for as long as possible without sulfites, not as a posture, but as a way of leaving the grape quality intact.
A quiet Santenay cellar
The domaine feels closer to a working bench than a polished tasting address. The noise is low; the scale does not invite spectacle. In Santenay, where limestone and clay carry both Pinot Noir and Chardonnay, the cellar’s purpose is to keep the differences between sites audible. Les Gravières, Beaurepaire, and Les Vignes Denses sit within a compact program, not as labels gathered for breadth, but as parcels asked to speak separately.
That restraint is also the point of the room. The craft here is not the chase for size; production sits at roughly 25,000 bottles per year, and the work remains tied to the measured gestures of pruning, picking, pressing, fermenting, and waiting.
