Keeping the pass clean in Zonza
Service turns on timing before it turns on flourish; Sébastien Chauchat , Chef Executif at Domaine Le Mouflon d'Or in Zonza, sets that tempo at A Népita. His earlier work as assistant to the chef at Grand Hôtel de Cala Rossa gave him the operating habits of a serious hotel kitchen: repetition, pressure, and the discipline to keep a dining room moving without noise. At the domaine, that training meets a house newly returned to use, where the kitchen has to serve the restored estate as much as the plate. Chauchat's remit is the kitchen's tone from prep through service, with flavour kept at the centre rather than decoration. He also cooks at A Nepita in Zonza, a second setting that keeps the same insistence on control. The station is steady, with a chef holding a formal room to a calm register while the mountain outside does its own work.
Three or four ingredients, held to the product
The program at A Népita is corso-méditerranéen in the plain sense: local harvests, island scents, fish when the market gives it, and plates pared back so the product is not lost under the hand. The house describes compositions built around 3-4 ingredients, a useful constraint in a kitchen that wants clarity more than display. Garden vegetable plates, local Corsican specialties, and the A Nepita tasting menu sit within that farm-to-table method. The wine program follows the same ground, with local Corsican wines given real place beside the food; the bars extend the register with craft cocktails rather than breaking from it. Chauchat's cooking is described through flavourful cuisine, which in practice means each element has to carry weight. An amuse-bouche cannot be ornamental. A fish course cannot hide behind garnish. The pass asks for cuissons that stay exact, sauces that do not blur the ingredient, and restraint that still lands with force.
Under the glass canopy
The room places the kitchen inside a restored Belle Époque estate in a 19-hectare mountain park, with A Népita set beneath an art déco glass canopy. Light catches clear marble, crystal suspensions, antique furniture, contemporary pieces, patinated woodwork, and diaphanous textiles; the effect is measured rather than theatrical. Lise Canarelli and Anthony Bornéa led the revival of the property, preserving façades, ridgelines, and chimneys while giving the house a present tense. The restaurant belongs to that larger gesture. It is formal, quiet, and small enough for service to read bench-side, with the pass connected to the dining room by pace more than spectacle. Outside, the Alta Rocca gives the place its pressure and its relief: regional park greenery, mountain air, the sense that a plate of local vegetables has not travelled far from its own weather.
A house reopened to the mountain
The domaine reopened on May 27, 2025 after several years of renovation, with A Népita carrying the culinary part of that return. As the house settles into its new life, Chauchat's station is the one to read plate by plate: the constraint of 3-4 ingredients, the Corsican wine beside them, the quiet room under the verrière. The close-up remains a fish course at A Népita.
