The hand that chose the cellar

Harvest asks for calculation before it asks for speech. Romain Taupenot, winemaker at Domaine Taupenot-Merme in Morey-Saint-Denis, works from that discipline, carrying the family domaine he has guided since 1998. Before he returned to wine, he trained in Paris and worked in finance; the habit of measure stayed with him, but the object changed. Balance moved from ledgers to fruit, élevage, and the question of how much a cellar should intervene.

He is the ninth generation at the domaine, a fact that sits quietly behind the work rather than above it. Lineage here is not decoration. It is the daily pressure of keeping a family structure legible through vintages, appellations, and parcels that do not behave alike. Taupenot has described the change from finance to wine without drama: “I’ve absolutely no interest in going back, I’m completely happy with what we have now.” The sentence has the plainness of someone who has already made the essential decision and has stayed with it.

Nineteen appellations under one discipline

The domaine works at small scale, about 80,000 bottles annually across 19 appellations from 13.2 hectares. Pinot Noir sits at the center, with Chardonnay, Gamay, and Aligoté also in the program. Organic viticulture has been practiced since 2001 across 13 hectares, giving the farming a stated frame without turning it into theatre. The parcels stretch through the Côte de Nuits and Côte de Beaune, with Grand Cru holdings that include Charmes-Chambertin and Clos des Lambrays.

Inside the winery, the method is described through restraint: traditional Burgundian production, temperature-controlled fermentation, and a cellar shaped around terroir expression rather than applied signature. The house does not need to publish every cellar gesture for the direction to be clear. Taupenot’s signature wines, including Les Didiers Premier Cru 2012 Nuits-St-Georges and Les Terres Blanches Premier Cru 2013 Nuits-St-Georges, point to place and vintage as the load-bearing elements. His own exclamation about a year, “It’s the vintage of the century!”, belongs to that cellar language: the vintage has to earn the sentence.

A quiet room for Côte de Nuits fruit

The room at Domaine Taupenot-Merme is described less as a stage than as a working Burgundian cellar, quiet, traditional, and close to the village fabric of Morey-Saint-Denis. The tasting room and cave sit beside the production life rather than apart from it; the cellar remains the center of gravity. This is not a winery built around spectacle. It is a place where the visitor’s eye is drawn back to barrels, tanks, parcels, and the sequence of decisions that make a bottle hold its line.

The setting matters because the domaine is not confined to one easy expression of Burgundy. Its work moves between red and white, between village identity and Grand Cru parcels. In that spread, Taupenot’s task is continuity without sameness. Clos des Lambrays is still a bottle with a name on it.
