    Patrick Pistolesi reads the room first

    The order begins with a mood, not a recipe. Patrick Pistolesi, founder of Drink Kong in Rome, built the bar around that small act of trust: a guest names a direction, dry, sweet, bitter, or something less tidy, and the bartender works from there. Patrick Pistolesi came to this bench after years moving between bartender, consultant, and founder, including his work at Gin Corner in Italy. At Drink Kong, that history becomes a particular kind of discipline. The bar does not ask the guest to recite ingredients back to the station. It asks the bartender to listen, translate, and keep the drink pleasurable after the first sip. Pistolesi has described the bar as a refuge, a place where people meet, return, and become themselves by degrees. The room follows that idea without softening it. It is dark, active, and built for attention; the hand behind the drink still has to decide when to push a flavor and when to let it settle.

    A menu built from instinct and restraint

    Drink Kong has worked with blind ordering since 2018, a method that leaves the menu spare and shifts the real labor to the exchange across the bar. Drink names and primary spirits give the first coordinates; flavor, texture, and appetite do the rest. The 2025 menu, Flux, is the fourth in that line of thinking, organized around reduction rather than accumulation. Its brief, “Subtract, nothing is everything,” divides the drinks into Fundamental, Harmonic, and Transcendent sections, with 29 new creations alongside house classics. Canova, a gimlet shaped by a sea-evoking cordial, holds its place as a modern classic for the house. Gaijin folds Japanese whisky with miso cordial, making the Japan and Italy conversation literal without turning it into decoration. Other drinks move by sharper angles: Shibui with rum, nutmeg, maple, and fig leaves; Be(e)true(t) with gin, ginger, mustard, and beetroot milk; Fear & Loathing in Oaxaca with jalapeño, tequila, and passion fruit. Cordials do much of the work here. So does subtraction.

    Neon, harlequin floors, and the back bar

    The bar carries its future-facing mood through dark lounge spaces, neon light, harlequin floors, and a retro-futurist arcade charge. It would be easy for that room to swallow the drink. Pistolesi’s format resists that by making the bartender the hinge between design and glass. The back bar reads global, from Japanese whisky to mezcal, vermouth, gin, amaro, grappa, rum, and tequila, but the program is less about range than control. Small plates bring fusion into the room without turning the counter into a dining room. The noise is lively, the pace modern, the service polished without stiffness. Drink Kong holds a place on The World’s 50 Best Bars list at 19, but the bar’s clearer measure is the repeatable moment at the counter, when a sparse menu becomes a drink with a name, a glass, and a direction.
