The tasting menu changes with the farm rather than with a fixed catalogue of dishes. Eigensinn is known for an 8-course format built from ingredients grown, raised, and foraged on or near the property: dandelion, watercress, spruce shoot honey from the bees, Georgian Bay fish, maple syrup, orchard fruit, herbs, pond catfish, pigs, and free-range fowl. Vegetables are grown fully ripe and GMO-free. Pigs are raised for 14 months rather than the standard 6. Free-range fowl mature over half a year, with the farm accepting 20% losses to predators.
