Akihiro Eguchi, co-founder of Find The Locker Room, brings a particular kind of pressure to that frame. In Singapore, his time at Waku Ghin from 2011 placed him inside a service culture where temperature, texture and timing had to land cleanly. He is Bar Director at Jigger and Pony and a bar consultant to The Japanese Highball Bar 1923 Krung Thep, and here his name sits inside a Bangkok project built around restraint, misdirection and control.
Past, present and future in the same glass
The bar programme is organised around a Past, Present, Future menu, a structure that lets the makers return to classic cocktails without treating them as fixed objects. The point is not novelty for its own sake. A classic gives the drink its spine; the present version adjusts texture, aroma or service; the future version asks what the form can still become. Eguchi's discipline is precision rather than theatre. His work at Waku Ghin used four shapes of ice, square, iceball, diamond and crushed, with the first three hand carved.
