A five-table room at altitude
Before the room has fully settled at Griggeler Stuba in Lech, the tasting menu is already moving through langoustine, wasabi greens and smoked eel. Its scale matters: five tables, wood panelling, quiet service, and a kitchen program built for concentration rather than volume. Sebastian Jakob leads that kitchen, bringing the creative direction of the menus with him after a spell at Schloss Ellmau, and Annika Beutel works the pastry section as chef pâtissière. The restaurant sits inside the Burg Vital Resort in Oberlech, a car-free plateau above Lech am Arlberg at roughly 1700 metres, and the setting is not incidental to the cooking. Wood, quiet, and the pass
The room is stylish rather than theatrical, with simple wood panelling, warm light and a quietness that lets service do its work without announcing itself. In a larger dining room, the pass can become distant. Here it stays close. Five tables mean the interval between the kitchen and the guest is brief, and the food has little time to lose heat, foam, gloss or lift.
That intimacy gives the place its particular pressure. A tasting menu can hide in spectacle when the room is large; Griggeler Stuba has less cover. The plate lands, the glass follows, and the next course has to justify the one before it.
