His cooking here comes from a Northern apprenticeship rather than a borrowed rural mood. He trained at Kendal College, began as an apprentice at English Lakes Hotels, then took chef de partie stations at Sharrow Bay Hotel in Ullswater and Gilpin Lodge in Crook. From 2005, at L'Enclume, he worked as sous chef and head forager, putting the stove and the hedgerow into the same discipline.

    That line runs into heft without needing much decoration. Tickle became head chef at Rogan & Co, then at Forest Side, before taking the chef patron role here in 2020. The house is also Kevin and Nicola Tickle's restoration of a 17th-century village inn, with the old pub function kept alive beside the restaurant. His own explanation is spare: “For me, it's simple really, stick to seasonal ingredients which are as local as possible, and try to do something interesting with them.” The sentence is useful because it gives the kitchen its limits.     The restaurant works as an intimate 28-cover room, with a tasting menu shaped by what northern England can give cleanly in season. The kitchen has used rare-breed meats, wild game, artisan cheeses, North Sea fish and foraged elements, with bar cooking and restaurant cooking sharing the same habits of pickling, smoking and fermentation. The difference is register, not source. A sausage roll, a venison stew with pickled red cabbage and herb crumb, or smoked mackerel with fermented beetroot can sit in the bar; the restaurant draws the same larder into a longer sequence.

    Tickle's dishes often hold contrast without letting contrast become the point. St James roast yeast crumpets carry warmth and fermentation. Gotty's squeaky cheese glazed in thyme honey brings a regional dairy note into sweetness. Scorched cod with cockle and savoury broth stays closer to the core of the place: coastal, pared back, each component doing a job. The Michelin star belongs to heft, and the inspection language has noted depth and originality in cooking tied to season, surroundings and foraging knowledge. Awards sit best here as weather marks on the building, not as the reason to look.

    The room keeps the inn in view

    The room does not erase the village inn it came from. Slate floors, woodburners and time-worn beams keep the service grounded, while the pass carries the quieter pressure of a formal tasting menu. It is a house of two speeds: the front bar with pints, snacks and local use, and the rear restaurant where the pacing tightens and the plates arrive with more intent. Tickle has said, “I've always wanted my food to be served with a level of informality, to allow everyone to feel comfortable and welcome.” At heft, that informality is not looseness. It is a way of taking stiffness out of the room so the food can keep its concentration.

    Newton in Cartmel matters to the work because the kitchen does not treat place as backdrop. It is a working radius, from fields and farms to coast and fell, brought back to the bench by a chef who learned to read that ground before he made it a menu. When the season turns, the close attention remains on the same materials: rosehips, wild game, North Sea fish and the old beams of heft.
