    Concept made usable at the pass

    A plate leaves the pass only after Wandile Mabaso, Chef at Les Creatifs in Johannesburg, has turned the idea into a workable sequence of taste, pace and presentation. At the Bryanston restaurant, Wandile Mabaso holds the founder’s position and the Executive Chef’s brief, which makes the room an extension of his bench rather than a stage set around it. His path began with training at Capsicum, then the production rhythm of Nando's, then a larger international operation at Kaiser group in New York City as Executive Sous Chef. Intern work in Europe and Italy sits in the same line of apprenticeship, service and pressure. At Les Créatifs Restaurant, established in August 2019, those movements settle into a South African fine-dining house built around Afrique moderne, his language for modernized African cuisine. Mabaso’s own description of the work is spare: “I enjoy bringing creativity to reality.” In this kitchen, that means a concept must survive the pass, the timing of service and the final plate.

    Four courses, regional names, French control

    The restaurant’s structure is a four-course tasting menu, with regional sourcing carried into the names and construction of the dishes. Hout Bay Tuna brings tuna toro tartare, trout caviar and coconut jus into the first movement of the meal. Krugersdorp Goat runs longer and deeper: 8hr braised goat with black rice, baby vegetables and goat cheese. Cape Malay Duck Breast uses smoked duck breast, grape chutney, anise carrot puree, chick pea ragout, baby beets and duck jus. The method is modern and French in its control, but the references remain local, from chakalaka potato to naartjie gastrique, amasi, Ghanaian chocolate, Dullstroom pollen honey and impepho-smoked tripe jus. The kitchen also works with sous vide quail, confits, emulsions, purees and smoking. Mabaso’s private dining experience with Duval-Leroy Cuvée Sur-Mesure Wandile Mabaso gives the beverage program a named place in the composition of the table, not as ornament, but as another decision in the sequence.

    An intimate room arranged around the plate

    The room reads more like a small gallery than a conventional dining room, with art, ceramics, warm lighting and a quiet register around the tables. Donald Nxumalo’s interior work gives the space its designed calm, while ceramic artist Andile Ndyalvane makes plates by hand and Mozambican refugee artist Arlindo Maunde places visual work in the room. The open kitchen view matters because Mabaso’s food depends on visible discipline: sauces held, garnishes placed, plates carried with the exactness of a formal service. The setting is in Bryanston, in a former office space inside Hobart Grove Centre, but the atmosphere pulls inward. The pass, the counter and the room all serve the same point, which is attention on the plate.

    A Champagne detail with a date

    The private champagne-paired dining experience, launched for January 2026 bookings, gives the restaurant one concrete next marker without changing its center of gravity. The object to follow is already named in the house language: Duval-Leroy Cuvée Sur-Mesure Wandile Mabaso.
