Blending from the sensory bench

The first decision is sensory, not decorative: a cask, a sample, a line drawn between weight and lift. Angela D’Orazio, former winemaker at Mackmyra in Valbo, Gävle, Sweden, worked from that point of judgment, where tasting becomes structure. Sommelier training gave her the formal grammar of assessment; Mackmyra gave her the long working line inside whisky production. She moved through the house as an external whisky sensory panel member, whisky consultant, head of development, and master blender, roles that keep evaluation close to recipe development rather than treating it as an afterthought.

Her language for the work is plain and practical. She has called the role “the chef of the whiskies, the casks and the bottles,” a phrase that suits a maker who thinks in components, combinations, and balance. At Mackmyra, that means reading spirit not as a finished object but as material with direction. The hand is in selection. The discipline is in restraint.

A gravity tower near Gävle

Mackmyra’s working architecture gives the method its own vertical logic: a seven-story gravity distillery tower near Gävle, built for flow rather than theatre. The house works at small scale and states a sustainable production philosophy, with gravity doing part of the physical labor that pumps would otherwise take on. In a whisky context, that detail matters because movement, oxygen, vessel, and timing all leave marks before a blender begins to assemble the final shape.

The house is also known for maturation in Swedish places that are not generic warehouse shorthand. Casks rest in varied settings, including mines and islands, where temperature, humidity, and stillness carry their own pressure on the aging spirit. Mackmyra does not need to turn that into myth for it to have consequence. A mine is a cellar with a different kind of silence. An island asks different things of wood, air, and time.

The room above the work

The tasting room sits in the same modern industrial register as the tower, with views that reach toward the Baltic Sea. The atmosphere is relaxed, conversational, and close enough to the process that the glass does not feel detached from the still house below it. Staff knowledge matters here because the whisky asks to be read through cask, blend, and place, not through a list of adjectives.

That setting gives D’Orazio’s work a clear frame: the maker, the vertical house, the Swedish maturation sites, the pour in front of you. She has since stepped into creative direction in whiskymaking at Compass Box from 2025, but the Mackmyra line remains legible in the same discipline of components and balance. At Mackmyra, the argument finally returns to the cask and ends on the sample glass.
