Here the atmosphere stays quiet enough for the cut of fish, the placement of a bowl, and the pour of sake to remain part of the meal.

    That restraint gives Masa its particular shape in Frankfurt: a Japanese counter experience set into an Ostend townhouse, formal in service, intimate in scale, and built around ingredient quality rather than spectacle. The next published changes to the menu point to 2025 and 2026, so the craft will keep moving inside the same narrow frame. For now, the clearest line through the house is still sashimi, wagyu, sake, and the counter on Hanauer Landstraße 131.
