Salt before weight

Salt, acid, and white fruit set the first decision for Dan Petroski, founder-winemaker at Massican Winery in Napa. Dan Petroski built the house around the narrowness of that choice, working in a valley more often read through red wine, power, and extraction. His formation did not begin in a cellar. Before wine, he studied at Columbia University and New York University, then worked in publishing at Time Inc., where pacing and clarity were part of the daily discipline. The agricultural turn came in 2005 at Valle dell'Acate in Sicily, when wine moved from language to fruit, weather, labor, and timing. Harvest work followed at DuMOL in Russian River, then at Larkmead in Napa Valley, where he became cellarmaster and stayed until 2021. Since 2009 he has led Massican as founder-winemaker, holding to white wine as the whole assignment rather than a side of the cellar. Friuli gives the reference point: lift, clean lines, salt, and table use. California gives the fruit.

A white cellar with a narrow brief

Massican works from a proposition that has to prove itself vintage by vintage: Napa Valley can carry a white-wine language of freshness without borrowing its authority from red wine. The winery is the appellation's only house devoted exclusively to white wine, with Mediterranean inspiration and Italian-origin varieties at the center. Sauvignon Blanc, Chardonnay, Tocai Friulano, Ribolla Gialla, Pinot Grigio, Pinot Bianco, Greco, Falanghina, and Fiano form the vocabulary. The method published around the wines is less about display than restraint: lower alcohol, vivid fruit, clean acidity, and a saline line that keeps the glass moving toward food. Annia, named for Petroski's Italian mother, is built on Ribolla Gialla and Tocai Friulano, with perfume and mineral tension carrying the blend. Gemina takes texture from Pinot Grigio and Greco di Tufo. Massican Sauvignon Blanc found an early dining-room audience when the French Laundry bought the first 50 cases and kept the wine by the glass for 10 years, a placement that depended on appetite as much as reputation.

The quiet of Napa white wine

The setting is Napa and Sonoma vineyard country, with winery facilities shaped around a small, sustainable program rather than volume. The atmosphere is quiet, elegant, and close to the work: a place for white wine read through acidity, not oak weight; through salt and fruit, not density. Private tastings belong to the hospitality structure, but the room's character follows the cellar's argument. Nothing in the Massican register asks the glass to be large. The pressure is in the line, the cut, the way a wine stays bright after the first sip. That kind of restraint gives the place its pace. In a region fluent in concentration, Massican keeps returning to Ribolla Gialla, Tocai Friulano, and Sauvignon Blanc.
