The line is the first decision, before the barrel or the blend. Danilo Drocco, winemaker at Nino Negri in Chiuro, works from that premise: a house style held steady while each vintage keeps its own shape. He has held the role since 2018, after working as winemaker at Fontanafredda in Serralunga d’Alba, and his path into Valtellina comes through the Langhe, where hills and vines train a practical eye. At Nino Negri, that background meets a steeper discipline. The estate works in the Valtellina Superiore DOCG, with Nebbiolo, locally Chiavennasca, drawn from mountain slopes and terraced ground. Drocco’s own phrase, “I am Danilo Drocco, I am the winemaker of the line,” gives the station its weight. It is not a claim of authorship over everything in the glass. It is a brief: carry the method, read the season, keep the wine connected to origin.

The craft here begins outside the cellar, on 76 acres in prestigious Valtellina zones, where steep terraces and UNESCO-protected dry stone walls make vineyard work physical before it becomes aesthetic. The production philosophy is sustainable, and the farming is dry-farmed; those facts matter in a place where slope, exposure, and restraint shape the fruit before Drocco sees it at the bench-side of the cellar. The house works with still red wines, and the signature names give the range its frame: Sforzato 5 Star, Sfursat, Ca’Brione Alpi Pietriche, Inferno, and Ca’Guicciardi Inferno. Drocco speaks of appassimento directly, crediting it with the unique aromas that dried grapes develop. The method is simple in outline and demanding in execution. Fruit is selected for concentration and structure, then time does part of the shaping. In Valtellina, Nebbiolo keeps its line through tannin, alpine tension, and the slow accumulation of cellar decisions.

Under Castello Quadrio

The place of work is Castello Quadrio, a 15th-century castle in Chiuro with underground cellars connected by ancient corridors. The cellar holds more than 1,500 barriques, a scale that changes the feeling of the room without making it loud. Stone, dim light, and the repetition of barrels give the aging spaces their rhythm. This is not a bright tasting counter built around speed; it is a cellar where the visitor’s sense of the wine comes through descent, cool air, and the nearness of wood. Nino Negri also carries more than 120 years of mountain viticulture behind it, and that history sits plainly in the setting. The castle is not decoration around the work. It is part of the working grammar, from corridor to barrel to bottle.

What Drocco is asked to keep is continuity: Valtellina Superiore DOCG, Chiavennasca, appassimento where the wine calls for it, and a cellar built to let time do visible work. If the close of the story is anywhere, it is in the names still moving through his hands: Sforzato 5 Star and Ca’Guicciardi Inferno.
